Filipino Recipes - Directory

By

Filipino cooking reflects the history of the island. Filipino food has Malay origins, but years of trade and colonization particularly by the Spaniards, have blended in the flavours and ingredients of Spain, China and America. Over the centuries, ingredients have been added through brought by foreign influences and surprisingly a blend with identity of its own has emerged.

With over 7,000 islands, the Philippines has a lot of shoreline and fish and seafood play an important part in the diet.

Throughout the day the Filipinos love to eat snacks often sweet bun in the morning but also in the afternoon. Merienda is similar to morning or afternoon tea, it  can be a serving of a bowl of noodles, breads, there is a great variety of native cakes that  are prepared from rice and coconut milk.

There is no shortage of street food and exoctic food like the popular balut a duck egg with the foetus, which is eaten whole.

And no Filipino meal is complete without a dessert whether it is simple fruit or prepared sweets like glazed kamote (sweet potato) in syrup or special dessert like leche flan.

The results of the blending of traditional Philippine cooking and foreign borrowings are generally tasty without being too spicy, simple but not bare, exciting but strange and extremely good to eat without being too rich or fattening.

There is nothing quite like the wonderful memory of sharing delicious food that have been prepared with love and care from recipes that have been passed down through the generations.
